A Good Roasting
Sharing a traditional roast dinner is a great way to get together with friend and family comforting, filling on cold winter days and not has hard to make as you might think.

This cold weather is making me crave roast dinners. I feel so British harping on about the weather, but I think it does so influence the foods we want to eat, so I make no apologies.
As a child, we, like many families back then, had a roast dinner every Sunday. As my own children grew up I pretty much carried on the tradition most weeks.
Over time these roast dinners have somethimes taken on a more modern twist, we might cook our roast on the barbecue, serving the meat with wraps and salad in the summer, or have a slow roast lamb joint flavoured with middle eastern spices, and served couscous instead of roasties. Others times we stick with tradition.
But now the children have grown, things change, I often like to serve a roast of some kind whenever we get together. Although more often than not now, its’s not on a Sunday!
And even when it just the two of us at home on a weekend, I might still make a Sunday roast, especially in the winter months as I love the fact that it gives us leftovers to make into meals the following week.
If you find the idea of cooking a roast a bit daunting think again. The secret to a good roast dinner is timing, each element itself is easy. If you are new to cooking a roast or do not make them very often, take a couple of minutes to make a simple time plan so you know when to put the roast potatoes or the veggies on and it will come together nicely. With a bit of practice it becomes second nature.
Remember that meat should rest for at least 15 minutes and can be longer before carving, so time the rest of the dinner to be ready about 15-30 minutes after the meat is cooked.
