It’s the last long holiday weekend of the year here in the UK which is the perfect excuse to do a spot of late summer baking. Much as I love baking, I don’t do that much in the summer months, so I am really looking forward to doing a spot more as Autumn fast approaches.
The recipes I am sharing with you this weekend include a crispy open summer pie or tart, call it what you will, filled with tasty summer vegetables. A spinach, ricotta, and feta pie made with puff pastry which is delicious, eaten hot or cold, so it is ideal for picnics. Plus a beetroot tarte tatin with a crisp walnut pastry. Any of these savoury bakes would be perfect for enjoying al fresco if the sun obliges or indoors if it is a bit chillier. They taste very much of summer, which I refuse to say goodbye to yet, especially as it took so long to get started. But equally they feel like comfort food that gives you a warm glow even when the temperature is not so hot.
If you fancy a little sweet baking, strawberries are still plentiful and cheap at the moment, so a baked strawberry cheesecake or my strawberry meringue roulade might be just the thing.
