Another air fryer and some tasty lamb recipes
When one air fryer is not enough plus three easy lamb dishes perfect for summer and a delicious fruity dessert.

I hope you have had a good week. It’s been a fairly uneventful week for me, although in the kitchen, I did take delivery of a second air fryer, a bargain purchased on Amazon Prime Day.
I put off buying an air fryer for a long time because I wasn’t sure what to look for and there were so many variations. My first purchase at the end of last year was a Ninja, which was a Which recommended buy, and that was all I had to go on.
From the start, I loved it, but there were many occasions when it was just too small. It would be fine for one person or two people at a push but I still often find myself cooking for more than that.


My new one is a Cosori and it has a much bigger basket. It came recommended by a number of my blogger friends so at the bargain price of £50 I decided to take the plunge. It takes about the same amount of worktop space (photographed above in the same space) and both have a 20cm basket, but the Ninja’s is round, and this is square, giving a much bigger surface area, as you can see below, which I now know is what you are looking for in an air fryer.



If you are considering buying an air fryer, I recommend looking for one with a good-sized interior basket. Because it is the surface area that counts, you can not always tell by volume size, which is generally what's quoted on the packaging. Some are very deep, so while they are bigger, their useful cooking size is smaller in most cases you want food in a single layer.
Or you could consider buying a dual basket; otherwise, you may end up like me buying a second one! That said, I've already had both going at the same time, so no regrets (apart from the loss of worktop area, which is at a premium).
It looks like summer might finally be here or at least we have had less rain. I know I’m obsessed with the weather, but I’m British, and I think we all are. Down at the allotment, the raspberries are still giving a daily crop, and we have had our first runner beans, one of my favourite vegetables, so we are cooking those while they are lovely and fresh.
This week I am sharing three easy and tasty summer lamb dishes plus a fabulous summer dessert. In fact regardless of rain or shine, I am cooking a lot more lighter summer dishes at the moment, so you can expect more summer dishes to follow in the next few weeks.

These lamb flatbreads make a delicious midweek meal. A little like a pizza but the flatbread is topped with savoury minced lamb.
Easy Lamb Kebabs
These easy lamb kebabs are made with tender lamb marinated in a lemon, garlic and herb marinade.
Cook them on the barbecue or, if the weather isn't playing ball, under a hot grill or in the air fryer. Either way they will taste fantastic.
Hariss Lamb Meatballs
Here's a great, easy to make, light summer meal. Harissa lamb meatballs are made of minced lamb, flavoured with onions and harissa. Serve them in flatbreads with a red cabbage and apple slaw. Absolutely delicious, even if I say so myself.
