Hello friends

I hope you have had a good week. Its certainly become colder here, so I for one have started to turn to warm winter dishes and comfort foods. Thursday night, we tucked into a delicious plate of sausage and mash with onion gravy for dinner made by Mr.B. It was just the ticket after arriving home from 2 hours of singing on a freezing cold station concourse with my choir.

While I adore mashed potatoes, I am also rather partial to mashed Swede, so I have published my favourite recipe for it on Recipes Made Easy This is mashed swede cooked how I remember my mum used to make it. It is fantastic with a roast as well as with sausages and grilled meats.

I add onion to my mashed swede, so the texture is not silky smooth but it does help make the sweetish flavour of swede taste even better and gives the mash more body. I season after cooking and keep the drained water to make stock (with the addition of a stock cube) for gravy so none of the water-soluble nutrients are lost, and I have an even tastier gravy which is a win-win.
