You may not know this but every year on the 3rd Sunday of May it is world baking day, encouraging people around the world to discover the joy of home baking. As if we need encouragement. I know I don’t need much of an excuse but if this encourages those who do not bake or those who only bake occasionally to bake more then I’m all for it.
So today I am sharing with you the pick of my favourite quick and easy bakes because if we get more of that glorious sunshine we have been having here in the UK we don’t want to have the oven on for too long.

Rock Cakes – Recipes Made Easy
If I remember rightly, Rock cakes were the first thing I ever cooked. So easy to make and ready in around 30 minutes.
Scones – Recipes Made Easy
Scones taste great and are quick to make and only take 15 minutes to bake. Fruit, cheese or plain the choice is yours.
Banana and Tahini Muffins – Only Crumbs Remain
Much as I like banana bread, it does take a while to bake. These Banana muffins take only 25 minutes to cook and they are even easier to make than banana bread. Don’t worry if you don’t have any tahini to hand you can leave it out. I have before by mistake and they were still delicious.
