Planning what to write and share in my newsletter each week is a little like trying to decide what to cook for dinner each night. I think about what’s in season, what offers good value, have we had it before, and if so how recently? Is there a special occasion or specific date to take into account or is there something new?
And looking at the calendar as I thought about what to write this week I saw that on Tuesday St. Patrick’s day has come round again. Irish Soda bread immediately springs to mind. I have shared recipes for St.Patrick’s day before (and will again) but then, Irish soda bread is really quick to make, so why not share some other quick breads.
Even if you, like me, love spending the time in a warm kitchen baking bread, sometimes we need bread in a hurry and that’s when quick breads such as these come into their own. I hope you enjoy them and my nod to St. Patrick’s day and if you want something sweet to eat on this occassion I’ve got you covered with my Irish coffee cake.

Soda bread

📌Cook’s Tip
Soda bread is best eaten the day it is made but if you want to keep it to the following day then pop it in a bag to help keep it moist.
Soda bread also freezes well so you could pop what you don’t need into the freezer for another day.
Yogurt is often used in quick breads. I find that the liquidity of yogurt can vary a lot from brand to brand. If your go-to yogurt is very runny, add a little less than to begin with, as you might not need the full amount. Conversely, if it’s very thick, thin with a little water or milk or add additional milk to get the dough to the correct consistency.
