At long last Spring has finally arrived, and with it comes the perfect excuse to fill the kitchen with light, fresh spring bakes.

It is so nice to be seeing blue skies at last, I’m hoping for a lovely spring after such a wet albeit mild, winter. Fingers crossed for similar weather at Easter which is fast approaching.
Now that the weather is beginning to play ball and its feeling more spring-like, this week I thought I would share some of my favourite spring cakes for entertaining with family and friends in this warmer weather, including a traditional cake for Easter.

Tempering (chocolate) – is the process of heating and cooling chocolate so that it sets to a crisp, shiny finish. It gives chocolate that characteristic snap when you bite into it. Untempered chocolate has no "bite", will look dull, and may develop a bloom (spotty dull white colour) which spoils the appearance.
