Spring is in the air
The sun is shining so now it’s time to start shaking off the winter blues and bring fresh flavours into your cooking while making use of seasonal vegetables during the hungar gap!
Hello all
I have been in Suffolk this week and the weather here has been beautiful. Perfect spring days, frosty mornings giving way to beautiful sunshine but chilly as soon as the sun goes down. I know its not going to last but its a reminder that the long wet winter we have had will soon be over.
Because of the weather, I found it impossible not to spend all my time working in the garden and I haven’t done any work on either of the blogs. In fact this is the first time I have sat at my computer all week!
I hope those of you that also have good weather have had a chance to enjoy it.
I love the change of seasons as it brings with it a change in the foods I cook. I really enjoy cooking seasonally whenever I can. However, this time of year is sometimes called the hunger gap as winter vegetables are coming to an end and spring-summer vegetables are yet to appear in any quantity. So I thought today I would share some of my recipes that make the most of the vegetables that are available at this time of the year
Until next time have a delicious week.
Beetroot, Squash and Feta Salad – Recipes Made Easy
This is one of my most popular recipes and with good reason. Its a hearty and very tasty salad. The earthy flavour of beetroot, the sweetness of butternut squash and the saltiness of feta make a delicious combination. Perfect for warmer Spring Days
Goats Cheese. salad with Sundried Tomatoes – Recipes Made Easy
Most tomatoes at this time of year have little flavour, so this salad uses preserved sun-dried tomatoes and is a fabulous combination of flavours and textures. It makes it a delicious light lunch for two or a starter for four people.
Carrot and Coriander Soup – Recipes Made Easy
Carrot and Coriander Soup is really simple to make and tastes delicious. It's a fairly classic flavour combination which works well.
Leek, Spinach and Cannellini Bean Soup – Recipes Made Easy
This soup is also quick and easy to make. Filling without being too rich, making it an ideal lunchtime dish which will keep you satisfied until supper time.
Beetroot, Walnut and Rosemary Tarte Tatin - Only Crumbs Remain
Beetroot with a sweet-sour glaze on a deliciously crumbly walnut flavoured pastry. This Beetroot Tarte Tatin with Walnuts and Rosemary would make an excellent starter for a dinner party or a light lunch or dinner.
Homity Pie - Only Crumbs Remain
Homity Pie is a simple, homely, and nutritious bake. It is a vegetarian open pie packed with potatoes, spring onions, leeks, and cheese, and is delicious served either with a green salad or a medley of your favourite vegetables.
