I hope you have had a good week. Finally, my week has gone to plan, which makes a change :) Last week's cold is gone (thank goodness it wasn’t one of those dreadful bugs that lasted for ages.) My physio was very happy with the range of movement I now have back in my wrist after its fracture, so I am able to do much more.
The new recipe I planned to share last week, Sausage and Apple Traybake is now published on Recipes Made Easy - It makes a great midweek meal as it is so quick to prepare.
I also managed to get a few jobs done at home and I’m even on track with this weekly email. I do hope you have had a good week too.
Tuesday is Valentine’s day. Grabbing a box of chocolates from the supermarket shelf is easy, but when you make them yourself you also give your time and love. Which makes them a much more special gift and will earn you some serious brownie points. So why not treat someone special (or yourself) with some homemade chocolates or candy?

Sausage and Apple Traybake
Quick to prepare, making it perfect for a midweek family dinner.
It takes just a few minutes to prepare the potatoes, onions and apples then it’s just a case of combining them with seasoning and oil and placing the sausages on top. Then just pop into a roasting tin and let the oven do its thing.
Whilst baking, the potatoes and onion are cooked until tender with some crispy bits on top. The sausages are browned and cooked through, while the cider (or stock) reduces down to produce just enough delicious juices to stop the finished dish from being dry.
The end result with minimal effort is a sausage traybake that is delicious, filling and comforting. Baking the dish in one tin also means less washing up which has to be a bonus.

Other things I've been up to in the kitchen this week
I have been doing a bit of decluttering and I’m so pleased with my now much more organised spice drawer. I have also put a couple of racks in my pan cupboard so everything is much easier to get out. (If I was more on trend no doubt I would have made a Tic Tok about it!)
And yes the door is missing from my cupboard and quite a few of my cupboard doors are coming off the hinges. I bet you thought as a food writer, I would have the perfect kitchen. I wish! My kitchen is definitely a bit worn around the edges, as it has a hard life. But my planned refurbing of the kitchen is one of those things that has to remain on the back burner for a little longer. But at least these are now tidier.
