MORE CRUMBS...... Watermelon, Feta and Mint Salad
As the British summer graces us for a few days with some rare but delightful warmth this week, it's the perfect time to refresh our palates with something light, vibrant, and utterly delicious.

In my main newsletter this week I featured my collection of salad recipes from the blogs but today I wanted to introduce you to a salad that's as simple to make as it is sensational to taste: Watermelon, Feta and Mint Salad. This delightful dish combines the juicy sweetness of watermelon with the creamy tanginess of feta, creating a delightful harmony of flavours.
It’s one of my favourites salads for stonking hot days so I eat it a lot when in Greece but that doesn’t mean it doesn’t also make appearance on my table back home, just not so frequently.
It makes a great side salad at summer BBQ’s, a perfect starter for summer entertaining or just fancy a quick and healthy lunch time or evening bite.
