Chocolate and orange is a classic flavour combination we all know and love. But sweet potato in a cake? Surely not?

This week, I have a new Bundt recipe that I want to share with you. I have been doing a fair bit of baking recently and adding vegetables to my cakes with excellent results.
Adding vegetables to cakes often makes them lighter and more moist. And as a plus side can often result in the need for less added sugar and some extra nutritional benefits too. Ok, so the cake is never going to be very healthy per se, and we all know it should be eaten in moderation, but at least in this case, you can have an extra slice without feeling quite so naughty.
My chocolate orange bundt cake is published on Only Crumbs Remain. This recipe incorporates sweet potato into the mix to produce a delightful chocolate orange cake finished with a drizzle of chocolate orange frosting. The cake is not overly sweet, and I think it’s delicious.
It’s been made in a bundt tin, and by coincidence, a friend that I met up for dinner with this week mentioned how she had just made a bundt cake with butternut squash in it. She then went on to rave about using her bundt tin because it cooked cakes so evenly. She has a good point.
